Best Ever Cassava Cake

Three days after Hurricane Irma, some of our friends were still without power.  We had our power restored the day after the storm made landfall. We were so grateful to all the personnel of FPL who continue to work long days to power us back up.  However, our internet did not return until 3 days later.

Some of our friends who had their power back on after a day, decided to cook dinner for those who were still in the dark.  In our preparation for the storm, we did not buy frozen or fresh food so we didn’t have much in the fridge.  We also tried to cook anything that would be perishable days before the storm.  So the only thing we had in the freezer were two bags of grated cassava.  We had purchased for a future event so I decided to prepare this Filipino dessert.

This is an easy dish to prepare and is a perfect partner for coffee, tea, or hot cocoa.  You may find the frozen grated cassava in any Oriental store.  For the topping, you may substitute a jar of sweetened macapuno, which you may also find in an oriental store.


3 c grated cassava
2 c coconut milk
1 c condensed milk
1 1/2 tbsps melted butter or margarine
2 medium eggs
1 1/2 c sugar
3/4 tbsp salt
