I am always on the look out for an easy and simple recipe to satisfy hubby’s and my sweet teeth. At the end of a long day we love to sit and sip coffee and always scrounge through the pantry for something sweet. I found this recipe by @gardeningfoodie and it is a current favorite. What makes this recipe great is the surprise swirl of cinnamon sugar in the middle of every slice. The aroma of cinnamon wafting throughout the house puts me in the holiday mood even if it still feels like summer outside. Worth noting in this recipe the use of buttermilk. Buttermilk breaks down the gluten in the batter. This helps baked goods become moist and tender. It is currently a favorite.
Cinnamon Sugar for Filling and Topping
- 1/3 c white sugar
- 1 1/2 tsp powdered cinnamon
Cinnamon Buttermilk Loaf Batter
- 1/2 c butter, softened
- 1 c white sugar
- 1 egg
- 1 c buttermilk
- 2 c all purpose flour
- 1 tsp baking soda
- Preheat over to 375 degrees F
- Line and grease a loaf pan
- In a small bowl, mix together cinnamon and sugar. Set aside.
4. Cream butter and sugar until about 2 min.
5. Add egg and buttermilk. Mix at medium speed for another 2 minutes.
6. Add dry ingredients and mix on moderate speed until well blended about another minute.
7. Batter should have this consistency.
8. Spoon half of the batter into a pan.
9. Sprinkle half of the cinnamon sugar mixture.
10. Spoon remaining batter and top off with remaining cinnamon sugar topping mixture.
11. Bake for 40-50 min or until a toothpick comes out clean. Cool for 10 minutes before taking out of the pan and serve.
Modifications: You may add half a cup of your favorite nuts. Chop them coarsely before adding and mixing in the batter or just on top of the cinnamon sugar mixture before topping off with remainder of the batter. I am partial to almond, pecan and walnuts myself.
Buttermilk: 1 tablespoon white vinegar or lemon juice plus enough milk to measure 1 cup. Let is stand for about 5 minutes. you can use 1 tablespoon of white vinegar or lemon juice plus enough milk to measure 1 cup. Stir, then let stand for 5 minutes.
Eggs: For a vegan alternative to egg. Add hot water to 1-2 tablespoons Chia seeds and let it stand about 30 minutes. Add about 2 tables to batter.
Flour: You ma also use cake flour for this recipe.
